Delicious Sooji/Semolina Pudding

Sooji is a delicious dessert that is made with semolina. Sooji is also known as soji and suji. It is a quick and easy dessert and there are many variations of this recipe. One can add ground almonds, or pistachios or exclude these ingredients. Raisins are also optional.

This recipe is vegan. However if you prefer to use regular milk or butter, you may do so.

Sooji is a popular dessert at Indian weddings in South Africa. It is also served with cream on the side. This is optional. It tastes just as good without the cream

I have limited the amount of sugar in this recipe. Add more sugar if you prefer it sweeter. On the other hand you may substitute the sugar for artificial sweetener if your doctor suggests that you reduce your sugar intake. Just follow the same recipe but add your sweetener instead of sugar.

Here is the Sooji Recipe

INGREDIENTS

  1. 1½ cup semolina
  2. 2 cups almond milk or any non-dairy milk
  3. 1 cup canned coconut milk
  4. 2 tblsp sugar or the equivalent in artificial sweetener
  5. 1 ½ stick vegan butter
  6. ½ tblps raisins, (optional)
  7. a pinch of salt
  8. 1 tsp. cardomom powder
  9. 2 tblsp. dessicated coconut
  10. 1 tblsp. finely chopped almonds
  11. ¼ tsp. nutmeg powder

METHOD

  1. Pick, semolina to remove any debris
  2. In a non stick pot, add semolina and lightly brown on medium temperature
  3. Add butter and stir contents until butter is well absorbed. Stir and cook between 1-2 minutes
  4. Add milk. Blend into semolina/sooji. Take a pinch and feel the contents. It may still be grainy at this stage
  5. Add the cup of coconut milk and mix well. Lower heat
  6. Add salt & sugar. Mix thoroughly. The contents should feel soft and no longer grainy
  7. Add spices, raisins & dessicated coconut. Adjust for sweetness.
  8. Serve as is or add a serving of cream if desired. This dessert is a nice accompaniment to tea

Those on special diets should substitute ingredients that comply with a particular health condition. Please note that you can substitute the sugar for artificial sweetener. If you prefer to use regular butter, milk and cream, just use those instead and this recipe should work just fine.
