Naan Khatais are cookies that include cardomom, chick pea flour and semolina amongst other ingredients. It is a very delicious cookie, and ranks as one of my favorites. There are several recipes for naan khatai in recipe books and on the website. After trial and error, I came up with a whole lot of naan khatais and also a recipe that is simple and really works well.

I found that it is very important to time the baking. I had some that were too hard and others that were slightly undercooked. The best amount of time for these cookies/biscuits is 16minutes. It should retain a creamy-light fawn color and be firm to the touch. Here is my version of naan khatai.



INGREDIENTS

  1. 2 cups all purpose/cake flour
  2. ½ cup channa/chickpea flour
  3. ¼ cup semolina
  4. ¾ cup Bakers Sugar/castor sugar, (use less sugar if your prefer)
  5. ¼ tsp. bicarbonate of soda/baking soda
  6. 1 tsp. ground cardomom/elachi
  7. ¼ tsp. ground nutmeg (optional)
  8. Fine slices or pieces of blanched almonds
  9. 1 cup ghee, (soft butter or vegan butter works as well)

METHOD

  1. Mix ghee and castor/bakers sugar in a bowl. Use a wooden spoon to create a soft creamy mass
  2. Keep aside ½ cup of cake flour
  3. Combine the rest of cake flour with chick pea flour. Sift to remove lumps
  4. Add semolina, spices, & baking soda. Blend ingredients
  5. Add creamed mix to the flours to form a smooth dough. If dough is too sticky add small amounts of saved flour
  6. Rub a small bit of butter on 2 baking trays. Break small pieces of dough. Form little balls. Flatten slightly & place on baking tray.
  7. Add slivers of sliced almonds to each piece of dough. Bake in a 350° oven for 16-20 minutes
  8. As it cools it will become firmer. Enjoy
