This recipe for Kolcata was created by a reader of this website, Vijay Thandrayan. She easily adapted the Kolcata recipe from the website, tweaking it with her own variation. She has received many compliments for her version.

Vijay emigrated to Australia from South Africa about 10 years ago. She is a very caring mother and grandmother and loves to spend time with her family. She is a creative cook, and enjoys entertaining, gardening and experimenting with new dishes.

INGREDIENTS

  1. 1 cup rice flour
  2. ½ cup dessicated coconut
  3. ½ cup condensed milk
  4. 1/4 cup milk
  5. 1/3 sesame seeds
  6. 1/3 cup ground almonds
  7. 1/3 cup sugar
  8. A pinch of salt
  9. 1 tsp.ground elachi/cardamom
  10. ½tsp.ground nutmeg
  11. 5 tblsps. soft melted butter

Method

  1. Place all ingredients in bowl. Add condensed milk and butter
  2. Slowly add milk-maybe not all of it-check mixture, which should be firm & not mushy
  3. Mold shapes with fingers
  4. Prepare pot for steaming
  5. Place large pot with water on stove
  6. Tie a soft cotton cloth or muslin around the pot
  7. Place Kolkata around the cloth
  8. Steam for 20 minutes, after the water reaches boiling point
  9. Remove & toss in coconut
  10. Enjoy
